Ingredients

The ingredients are:
  • 1 ham hock
  • 1 potato
  • 5 ounces cheddar cheese
  • 3 tablespoons chives, chopped
  • 1/2 teaspoon dijon mustard
  • Flour
  • 1 egg mixed with 1 tablespoon water
  • Breadcrumbs
  • Canola oil for frying

How to Make

  • Step 1: In a large saucepan over medium heat had the ham hock with enough water to cover and bring to a boil. Reduce heat to low and cook for 2 hours our until tender and falling off the bone. With a slotted spoon, remove from heat and let cool.

  • Step 2: Preheat oven to 350 degrees F. Bake potato for 1 hour or until tender when pierced. Cut in half and scoop out the potato (discard skin) and transfer to medium bowl and mash. Stir in chives, cheese and mustard.

  • Step 3: Pull ham from bone and with 2 forks , shred ham; cut into small pieces and stir into the potato mixture. Shape mixture into 2 inch cylinders. Roll each cylinder in flour, then in the beaten egg and then in the breadcrumbs; transfer to a baking sheet. Repeat with remaining mixture.

  • Step 4: In a skillet, heat oil to 375 degrees F and working in batches, fry fritters for 2 minutes or until golden. Transfer to paper towels lines tray. Heat oil to 375 degrees F for each batch. Serve with plum and chili jam.
