Step by Step Method

Step 1

Place a skillet over medium high heat. Sprinkle fish with 1/4 teaspoon salt and pepper. Add butter to skillet and after the butter melts add the fish and cook 1 minute. Stir in wine; cover; reduce heat to medium-low and cook 5-10 minutes or until fish flakes easily.

Step 2

Using another small skillet over high heat add the tomatoes and oil and cook for under 5 minutes or until charred.

Step 3

Place 1 fillet on each of 4 shallow dishes; spoon cooking liquid over and then divide tomatoes among all 4 dishes. Sprinkle with 1/4 teaspoon salt and the dill. Garnish with fresh oregano, if desired.

This dish is delightful! I had 3 pieces of halibut that my friend caught and was waiting for a yummy recipe. And yours fit the bill! Used grape tomatoes as that is what I had on hand, and a good Chardonnay. Will be keeping this recipe in the hopes that I will have more halibut. Thank you Ellie for sharing another keeper!
