Ingredients

The ingredients are:
  • 4 (26 ounce) halibut fish fillets (skinned, 4 fillets, 6 ounces each)
  • 1/2 teaspoon salt, divided
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 1/2 cup white wine
  • 1 1/2 cups cherry tomatoes (or grape tomatoes, the different colored tomatoes are pretty)
  • 1 teaspoon oil
  • 1 tablespoon dill, fresh

How to Make

  • Step 1: Place a skillet over medium high heat. Sprinkle fish with 1/4 teaspoon salt and pepper. Add butter to skillet and after the butter melts add the fish and cook 1 minute. Stir in wine; cover; reduce heat to medium-low and cook 5-10 minutes or until fish flakes easily.

  • Step 2: Using another small skillet over high heat add the tomatoes and oil and cook for under 5 minutes or until charred.

  • Step 3: Place 1 fillet on each of 4 shallow dishes; spoon cooking liquid over and then divide tomatoes among all 4 dishes. Sprinkle with 1/4 teaspoon salt and the dill. Garnish with fresh oregano, if desired.
