"This is a kind of clean the fridge recipe. I wanted something fast, easy & use up odds and ends - this recipe is the result. Serve over pasta, rice or mashed potatoes. Have your pasta (rice or mashed potatoes) all ready cooked and hot just before the beef mix-up is ready. Use whatever colour peppers you have on hand."

Step by Step Method

Step 1

Brown your ground beef in a skillet. Drain any fat.

Step 2

Add onions & mushrooms to the skillet cook until onions are translucent.

Step 3

Add all the remaining ingredients. Bring to simmer, reduce heat and simmer for about 15 minutes.

Step 4

Serve over either pasta, rice or mashed potatoes.

All I had on hand was V-8 juice so I used that instead of tomato juice. It gave the meat a little added spicy to it. We loved it over mashed potatoes!
