"This is a Paula Deen recipe... The first time I had these yummy appetizers, someone brought them to one of my parties. I took my first bite and was hooked. They are so delicious! NOTE: You can make these ahead... (After the grits toast are baked, you can cover them, and refrigerate to use later). The toasts are an awesome idea for any kind of appetizer where you need something to hold a topping on. Also, chopped shrimp or crab can be added into the topping, if you like seafood. (You can make the topping ahead of time except for the onion rings so they don't get soggy. Add them in right as you are preparing them to be eaten). I made the grits about 1/4 inch thick. and put about 1 tablespoon of topping on top of each one. I highly recommend these little gems to all! Great for the holidays or when you need to bring something for pot luck, or to entertain at home. "

Step by Step Method

Step 1

Grits Toast:

Step 2

Bring broth to boil in a large pot.

Step 3

Stir in grits and return to boil.

Step 4

Cover, reduce heat, simmer for 5 minutes (until grits thicken) stir occasionally.

Step 5

Stir in 1/2 cup parmesan cheese and the salt. Remove from heat.

Step 6

Pour grits into greased 9x13 inch baking dish.

Step 7

Cover with foil and chill at least 2 hours, or until firm.

Step 8

Invert onto large cutting board.

Step 9

Preheat oven to 400 degrees.

Step 10

Cut out 48 (1 1/2 inch) circles using a biscuit or cookie cutter.

Step 11

Place circles on large buttered jellyroll pan or cookie sheet.

Step 12

Bake 15 minutes, turn over, bake 15 minutes more.

Step 13

Set aside.

Topping:

In a bowl, mix mayonnaise, 1 cup parmesan cheese, mushrooms, and onion rings.

Step 16

Top each grit circle with mixture.

Step 17

Broil 5 minutes or until lightly browned and heated through.

I quartered the recipe to make for the two of us, and Wow, are they ever delicious! Those little grit cakes are just the perfect thing to set that yummy mushroom mixture on top of! These are amazing, and I will be sharing this little gem of a recipe with my fam and friends!

I made a double batch of the grits toasts so I could use them for a few appetizers for New Years Eve. This is the first one I made and everyone LOVED them! I loved that you could make these and serve them at room temperature and they tasted great! Several of my friends asked for the recipe, so they will be made again. The second batch I topped with Garlic and Herb Boursin Cheese Spread and topped with a large tiger shrimp, and a sprig of dill. They tasted great also and were enjoyed. I see myself making these many more times and especially using the grits toasts for many other types of appetizers.

I made them for our Christmas party at work and they were a real smash! I loved the little grits cakes. They were the perfect bottom to sit the delicious topping on, so that there was something to carry the filling to your mouth. What a sensational appetizer!
