"These potatoes are a nice side that is fast and easy to prepare. I sometimes add caramelized onions to the mix. To keep the packs from tearing, use heavy duty aluminum foil or two layers of regular foil. This recipe came from Cook's Illustrated."

Step by Step Method

Step 1

Place potatoes in large bowl and wrap tightly with plastic wrap.

Step 2

Steam or microwave until edges of potatoes are translucent, 4 - 7 minutes, shaking bowl (without removing plastic) to redistribute potatoes hallway through microwaving.

Step 3

Carefully remove plastic and drain well.

Step 4

Gently toss potatoes with oil, garlic, thyme, salt and pepper.

Step 5

Cut 4 10" x 14" sheets of aluminum foil.

Step 6

Working with one sheet at a time, spread one quarter of potato mixture over half of foil, folding foil over potatoes, and crimp edges tightly to seal.

Step 7

Place packs on preheated grill, cover until potatoes are completely tender, about 10 minutes, flipping packs halfway through cooking.

Step 8

Cut open foil and serve.

Yummy! I'm glad these have the precook in the microwave. I had tried some of these years ago and they didn't get done- but these were perfect! Only thing I'd add extra is a little sour cream before serving. The way I would a baked potato. Made for Billboard Tag.

This is a yummy potato recipe...I cut the recipe in half and it made the perfect amount...I cheated and put the packets in the oven with another dish I was cooking...what a quick and easy potato dish...made for "Billboard" tag game...

Delicious recipe, I scaled back for 1 serve but found it to large for me and only ate half (will be cooking up the other half for breakfast with an egg). I followed the recipe and I steamed them in my tiered steamer and finished them of in the oven at 175C for 30 minutes (don't think I steamed them long enough but I didn't test them at the time hence the extra cooking time in the oven). I scaled this down to make for my tater loving DH (I'm dieting, lol) and he devoured these. I did sample one and we agreed they are deeeelish!!! A repeat recipe for sure.
