Ingredients

The ingredients are:
  • 2 pounds Yukon Gold potatoes (washed, unpeeled, halved and cut into 8 wedges)
  • 1 tablespoon olive oil
  • 2 garlic cloves, chopped
  • 1 teaspoon thyme, minced (fresh)
  • Salt and pepper, to taste

How to Make

  • Step 1: Place potatoes in large bowl and wrap tightly with plastic wrap.

  • Step 2: Steam or microwave until edges of potatoes are translucent, 4 - 7 minutes, shaking bowl (without removing plastic) to redistribute potatoes hallway through microwaving.

  • Step 3: Carefully remove plastic and drain well.

  • Step 4: Gently toss potatoes with oil, garlic, thyme, salt and pepper.

  • Step 5: Cut 4 10" x 14" sheets of aluminum foil.

  • Step 6: Working with one sheet at a time, spread one quarter of potato mixture over half of foil, folding foil over potatoes, and crimp edges tightly to seal.

  • Step 7: Place packs on preheated grill, cover until potatoes are completely tender, about 10 minutes, flipping packs halfway through cooking.

  • Step 8: Cut open foil and serve.
