"These potatoes are a nice side that is fast and easy to prepare. I sometimes add caramelized onions to the mix. To keep the packs from tearing, use heavy duty aluminum foil or two layers of regular foil. This recipe came from Cook's Illustrated."

Step 1
Place potatoes in large bowl and wrap tightly with plastic wrap.
Step 2
Steam or microwave until edges of potatoes are translucent, 4 - 7 minutes, shaking bowl (without removing plastic) to redistribute potatoes hallway through microwaving.
Step 3
Carefully remove plastic and drain well.
Step 4
Gently toss potatoes with oil, garlic, thyme, salt and pepper.
Step 5
Cut 4 10" x 14" sheets of aluminum foil.
Step 6
Working with one sheet at a time, spread one quarter of potato mixture over half of foil, folding foil over potatoes, and crimp edges tightly to seal.
Step 7
Place packs on preheated grill, cover until potatoes are completely tender, about 10 minutes, flipping packs halfway through cooking.
Step 8
Cut open foil and serve.
