""This is another great Jalapeno Chicken recipe by Weight Watchers. It's out of the 2000 "Day by Day" cookbook. It had 3 points per serving on the old program. I have done both blender and fine chopping and they are both great. I find the extra bits and pieces by chopping instead of blending adds a great crunch to the dish and makes it look outstanding. Step by Step Method

Step 1

Place first 8 ingredients in a blender; process until smooth (or chopped them fine).

Step 2

Combine lime juice mixture and chicken in a large, heavy-duty zip-lock plastic bag.

Step 3

Seal bag, and marinate chicken in refrigerator 1 to 8 hours. (I have done over night).

Step 4

Prepare grill.

Step 5

Remove chicken from bag, reserving marinade.

Step 6

Place chicken on grill rack coated with cooking spray; cover and grill 12 minutes on each side or until done, basting occasionally with reserved marinade.

Kitchen Magic

We loved everything about this delicious chicken! I took out the jalapeno seeds so it wouldn't be too hot for the kids. I chopped all the stuff by hand and we loved the crunch. Marinated it the full 8 hours and that really added lots of flavor into the chicken. A do it again very soon for us!

This chicken was awesome! Loved how much flavor was in the chicken. I used skinless chicken thighs and cut the recipe in half, using agave nectar instead of honey, with great results. I love to grill so I will be making these often throughout the summer. Thank you for sharing another winner with us Teresa! Linda

Daily Inspiration

Delicious grilled chicken -- the marinade really added great flavor to the chicken. I scaled the recipe down for two people and marinated the chicken overnight. Served it alongside some roasted new potatoes and a salad. A really great meal -- one I'll be making again.
