Step by Step Method

Step 1

Slice the zucchini into 1/2 inch rounds and toss them in a large resealable plastic bags along with the oil, garlic and oregano.

Step 2

Gently swish the bag to evenly coat the zucchini rounds.

Step 3

Set aside and allow to sit at room temperature for a couple if hours.

Step 4

Remove the zucchini rounds from marinade and sprinkle generously with salt and pepper; cook on a preheated grill over direct heat for 3 to 4 minutes per side, or until done to your desired likeness.

Step 5

Enjoy!

I don't BBQ so I pan fried the slices on a hot, lightly oiled pan just over 2 minutes each side. Delicious. Easy & tasty. Will definitely make again
