"This is out of my Texas The Beautiful Cookbook...The mayonnaise is also good with grilled or broiled shrimp, barbecued hamburgers topped with cheese and green chiles, or cold grilled beef. You can serve the mayonnaise mixture as a dip for raw veggies as well."

Step 1

To make the chipotle mayonnaise, in a food processor fitted with the metal blade, combine the mayonnaise, lime zest and juice, mustard, chipotle chiles and salt. Puree until the mixture is smooth. Transfer to a small bowl, cover and refrigerate until serving.

Step 2

Preheat your grill.

Step 3

Salt and pepper the chicken breast to taste. Place the chicken on the grill rack and grill, turning once, until the chicken is opaque throughout when cut into with a knife. 4-5 minutes on each side.

Step 4

Transfer the chicken to a warmed platter and serve immediately with the chipotle mayonnaise alongside.
