Step 1: To make the chipotle mayonnaise, in a food processor fitted with the metal blade, combine the mayonnaise, lime zest and juice, mustard, chipotle chiles and salt. Puree until the mixture is smooth. Transfer to a small bowl, cover and refrigerate until serving.
Step 2: Preheat your grill.
Step 3: Salt and pepper the chicken breast to taste. Place the chicken on the grill rack and grill, turning once, until the chicken is opaque throughout when cut into with a knife. 4-5 minutes on each side.
Step 4: Transfer the chicken to a warmed platter and serve immediately with the chipotle mayonnaise alongside.
