Ingredients

The ingredients are:
  • 2/3 cup mayonnaise
  • 1/2 lime, zest of
  • 1/2 lime, juice of
  • 2 teaspoons Dijon-style mustard
  • 2 chipotle chiles in adobe (canned)
  • Salt, dash of
  • 6 to 8 (48 ounces) boneless skinless chicken breasts (halves about 6-8)

How to Make

  • Step 1: To make the chipotle mayonnaise, in a food processor fitted with the metal blade, combine the mayonnaise, lime zest and juice, mustard, chipotle chiles and salt. Puree until the mixture is smooth. Transfer to a small bowl, cover and refrigerate until serving.

  • Step 2: Preheat your grill.

  • Step 3: Salt and pepper the chicken breast to taste. Place the chicken on the grill rack and grill, turning once, until the chicken is opaque throughout when cut into with a knife. 4-5 minutes on each side.

  • Step 4: Transfer the chicken to a warmed platter and serve immediately with the chipotle mayonnaise alongside.
