Step by Step Method

Step 1

Zest the lemon and squeeze the juice, combine zest and juice with oil, basil and garlic in a small bowl.

Step 2

Put chicken breasts between wax paper and pound to an even thickness.

Step 3

Place in glad bag or bowl with marinade and leave for 30 minutes to 20 hours.

Step 4

Grill chicken on bbq, broil it, or even cook it in a hot skillet, 6-8 minutes approximately.

I loved this dish...the hubby thought it had to much lemon flavor...it was quick and easy to prepare...I let mine marinade for about 3 hours...what I really liked was that it's low in WW points...I also cooked it in a cast iron pan...made for FYC tag game...

Great chicken! Made as directed except I used dried basil and more chicken than indicated. Made the same amount of marinade and marinated the chicken for a bit under 2 hours. Wonderful! Thanks for sharing!
