Step by Step Method

Step 1

Remove and discard the stem, ribs and seeds from the peppers and chop the pepper into 1 inch pieces.

Step 2

Peel onion and chop into 1 inch pieces.

Step 3

Mix everything together in a large bowl and allow to marinate for about 4 hours.

Step 4

Place the peppers and onions on skewers alternately.

Step 5

Place on grill over direct medium-high heat until done to your desired consistency. (I like mine a la dente and leave them one for about 6 minutes turning them around every 2 minutes).

To save some time, I cooked the veggies in a grill basket over a charcoal grill. It came out yummers! I marinated it overnight and to the marinate, added some Umami Ramen seasoning and a bit more vinegar. To the finished veggies, sprinkled what was left of the marinate. It all came out so tasty. The hubs praised on how delicious it turned out and the rest of us agreed. Thank you, Bea, for sharing.
