Step 1: Remove and discard the stem, ribs and seeds from the peppers and chop the pepper into 1 inch pieces.
Step 2: Peel onion and chop into 1 inch pieces.
Step 3: Mix everything together in a large bowl and allow to marinate for about 4 hours.
Step 4: Place the peppers and onions on skewers alternately.
Step 5: Place on grill over direct medium-high heat until done to your desired consistency. (I like mine a la dente and leave them one for about 6 minutes turning them around every 2 minutes).
Step 6: Enjoy!
