"Last year at this time we were all set to cheer on our Saskatchewan Roughriders, the absolute hit at our Grey Cup gathering was Grey Cup Nachos, a recipe aired on Wheatland Cafe. We cheered and we munched - we didn't win the game but did come out with a winner of a recipe for football weekends. The ingredient amounts are simply guidelines, you can add more or less - the choice is yours. "

Step by Step Method
Step 1
Line pan with parchment paper or or use a well greased cookie sheet, place tortillas chips over bottom of pan
Step 2
Top with diced red pepper, sliced green onions, diced tomatoes, black beans and jalapenos. Spoon over salsa of your choice. Top with lots of shredded cheese
Step 3
Bake in 375F oven for about 10 minutes, or until the nachos are bubbly and warm all the way through. (I bake mine at 350)
Step 4
Transfer nachos to a serving tray or serve as is on the cookie sheet. Accompany with bowls of sour cream and guacamole. Transferring to a large white platter adds to the presentation - either way Grey Cup Nachos are a winner.
