Green Beans with Lemon and Cumin

Step 1

Bring a pot of salted water to a boil.

Step 2

Add green beans and simmer until just tender, about 3 minutes.

Step 3

Drain; plunge the beans into a large bowl of cold water to stop the cooking and drain again.

Step 4

Heat butter and oil in a large skillet over high heat.

Step 5

Add the cumin and sauté until fragrant, about 15 seconds.

Step 6

Add beans, salt, pepper, lemon zest and lemon juice; sauté until beans are crisp tender and lightly browned, about 4 minutes.

Zippy! I used whole cumin seed on mine instead of the ground cumin and it was wonderful. Has a nice different flavor and easy to prep early and finish at the very last, giving time to work on other recipes. We both gobbled these up.

Derf "RIP" Forever in our Kitchen

A nice different way to do green beans, very tasty! Love the lemon and cumin combination. I par boiled the beans early in the day and finished them just before supper. very easy to put together and i will be making them again, thanks for posting.
