Step by Step Method

Step 1

Melt butter in a large skillet over medium heat, tilting pan to coat completely.

Step 2

Add carrots and cook for 1 minute. Add sugar and stir to combine, cook for 1 minute.

Step 3

Add chicken broth, grated ginger, raisins, salt and pepper and cook for 20 minutes or until carrots are tender when pierced with a fork.

Step 4

Serve warm. Makes 4 servings.

Wow...what a wonderfully different combination of flavours! I subbed the raisins with cranberries (hope you don't mind). I wanted to thicken the broth and will do that next time. This is a great carrot recipe that will be enjoyed over and over! Thanks for sharing another delicious recipe Pia! Made for Billboard Recipe Tag.

I scaled back for one serve and it was a perfect portion size for me using a large carrot and slicing though because of the scale back there was not enough liquid to fully cook the carrots so had to finish them of in the microwave or risk burning them, thank you MsPia for a delicious side, made for Billboard Recipe Tag game.

Yummy, yum, yummy carrots, I added in more raisins cause we love them also increased the ginger, I think this is my new fav carrot recipe MsPia thanks a carrot bunch LOL! I made this for recipezazz Billboard tage game

This is so tasty and so easy. I love the flavour of ginger with almost anything but with carrots it is special. This recipe will be made over and over for sure. I used Thompson raisins instead of golden - it is what I had on hand. Thanks Pia we did enjoy your recipe
