Step by Step Method

Step 1

Place the carrots in a saucepan; add 1-inch of water. Bring to a boil. Reduce heat; cover and cook for 8 - 10 minutes or until crisp-tender. Drain and set aside.

Step 2

In the same pan, combine the cubed butter, brown sugar and salad dressing mix until blended.

Step 3

Add the carrots. Cook and stir over medium heat for minutes or until glazed.

If I could give 10 Stars to this recipe, I would. BUT I must admit to some adjustments. When you make an easy-fix recipe w/just 4 ingredients, pers pref can vary. I cooked 1 kilo of carrots (2.2 lbs), added the full amt of butter & 1/4 cup brown sugar = A perfect level of sweetness for us. Then I added 1 packet of the Ranch dry mix & we were good-to-go after a taste test. Reducing the dry mix was done mostly because DH has been salt-restricted since a kidney transplant 2 yrs ago. These great carrots were the hit of the meal & the timing was perfect as I had 3 house guests from Switzerland to feed. Your carrots were served w/grilled lamb tenderloin, garlic mashed potatoes & stuffed mushrooms. Thx for this great recipe, Nat. :-)

Daily Inspiration

We absolutely love this recipe -- it is one of my favorite dishes to serve during the holidays, but really it is an all-year round recipe. It's a great way to get your kids to eat their carrots. : )
