Step 1

Place the carrots in a pot and cover with water; bring to a boil over medium-high heat and continue to boil until just cooked. (You should be able to pierce the carrot slices with a fork)

Step 2

Drain and set aside.

Step 3

Whisk together the remaining ingredients in a small pot and bring to a boil over medium-high heat; reduce heat and simmer until wine sauce is thickened and glossy.

Step 4

Pour over carrots, gently toss and serve.

Subtle flavour that complimented the carrots. I used the whole baby gourmet carrots. They look so loveley on the plate. Served them with a very mild curried chicken - great partners. 4 May2014 Made again for a special friends birthday luncheon - she loved them and so do we.
