Step by Step Method

Step 1

In a medium saucepan over medium heat, melt the butter. Add the parsley and cook about 1 - 2 minutes, just to soften the parsley and let the flavors integrate.

Step 2

Add the carrots and stir to coat with the butter and parsley.

Step 3

Season to taste with salt and pepper and add the ginger, then add the ginger ale or soda.

Step 4

Bring to a boil, uncovered, reduce the heat to low, and simmer until the liquid is reduced by half and the carrots are tender, about 8 minutes.

O.M.G...... How good are these carrots! I made as per recipe for our roast tonight and may I say these are fabulous. I really loved the buttery flavor with the hint of ginger in these carrots. So simple and easy to make. I will be making these again for sure.

You can't go wrong with this tasty veggie dish...the hubby couldn't praise it enough and he's not a veggie lover...I used the lime soda and it worked perfectly...made for "Best of 2022" tag game per dienia b's recommendation...

I loved this easy but tasty carrot recipe. The ginger added a nice zing to the carrots, and the ginger ale made them tender with a slight spicy tone. We loved it! Thanks, ForeverMama.
