Step 1

In a medium saucepan over medium heat, melt the butter. Add the parsley and cook about 1 - 2 minutes, just to soften the parsley and let the flavors integrate.

Step 2

Add the carrots and stir to coat with the butter and parsley.

Step 3

Season to taste with salt and pepper and add the ginger, then add the ginger ale or soda.

Step 4

Bring to a boil, uncovered, reduce the heat to low, and simmer until the liquid is reduced by half and the carrots are tender, about 8 minutes.

Wow oh wow these are great I loved them they are going into best of file I used goslings ginger beer(non acholic) and was amazing I will wait to post my photo after beas,make this one
