Add the carrots and stir to coat with the butter and parsley.
Season to taste with salt and pepper and add the ginger, then add the ginger ale or soda.
Bring to a boil, uncovered, reduce the heat to low, and simmer until the liquid is reduced by half and the carrots are tender, about 8 minutes.
