Step 1: In a medium saucepan over medium heat, melt the butter. Add the parsley and cook about 1 - 2 minutes, just to soften the parsley and let the flavors integrate.
Step 2: Add the carrots and stir to coat with the butter and parsley.
Step 3: Season to taste with salt and pepper and add the ginger, then add the ginger ale or soda.
Step 4: Bring to a boil, uncovered, reduce the heat to low, and simmer until the liquid is reduced by half and the carrots are tender, about 8 minutes.
