Ingredients

The ingredients are:
  • 4 tablespoons butter
  • 2 tablespoons fresh parsley, finely chopped
  • 1 pound baby carrots, or regular carrots cut into 1/4-inch thick by 2-inch long strips
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon ground ginger
  • 1 (12 ounce) can ginger ale or lemon-lime soda

How to Make

  • Step 1: In a medium saucepan over medium heat, melt the butter. Add the parsley and cook about 1 - 2 minutes, just to soften the parsley and let the flavors integrate.

  • Step 2: Add the carrots and stir to coat with the butter and parsley.

  • Step 3: Season to taste with salt and pepper and add the ginger, then add the ginger ale or soda.

  • Step 4: Bring to a boil, uncovered, reduce the heat to low, and simmer until the liquid is reduced by half and the carrots are tender, about 8 minutes.
