Step 1

Heat the oven to 425 ° Fahrenheit. Grease a 15 X 10 baking sheet.

Step 2

Place the halved pattypan squash on the sheet. Mix everything together except for the parsley. Drizzle it over the squash, then toss it to coat it.

This was an easy and tasty vegetable for our dinner tonight. I am not sure if I cut it the right way in half. I didn't have any fresh parsley so we had to use dried parsley.

I had to use buttercup squash because I couldn't find pattypan so increased the cook time a bit. Delicious blend of flavors in the oil. Easy to make so a hit for me!!
