Step by Step Method

Step 1

Halve nectarines and remove stones and cut into wedges.

Step 2

Combine mascarpone with vanilla in a bowl and set aside.

Step 3

Heat a small non-stick frying pan over medium heat and sprinkle sugar evenly into pan and shake over heat until sugar melts and turns golden in colour and then add butter and cinnamon, swirling to combine and then add the nectarine wedges and simmer , uncovered for 3 to 5 minutes until they are just soft.

Step 4

Toast bread, half diagonally and place onto serving plates and top with a dollop of mascarpone, nectarines and caramel sauce and serve.

Wow, decadent and delicious, even with nonfat Greek yogurt. I did not have fruit bread in the house, but it worked out well, since the fruit/syrup/cinnamon pretty much mimics a raisin bread in flavor, and the sauce on top gives it a lot of sweetness. I scaled this back to one serv, but had enough topping for 2 small pieces of bread, which was just right for me for breakfast. Granted, this could definitely be a dessert! I also think it would be awesome over oatmeal, I will have to try that next time. Really yummy.
