Step 1: Halve nectarines and remove stones and cut into wedges.
Step 2: Combine mascarpone with vanilla in a bowl and set aside.
Step 3: Heat a small non-stick frying pan over medium heat and sprinkle sugar evenly into pan and shake over heat until sugar melts and turns golden in colour and then add butter and cinnamon, swirling to combine and then add the nectarine wedges and simmer , uncovered for 3 to 5 minutes until they are just soft.
Step 4: Toast bread, half diagonally and place onto serving plates and top with a dollop of mascarpone, nectarines and caramel sauce and serve.
