"No eggs or milk in this creamy dessert. Use your favorite fruit juice. I wrote it with pineapple juice, but orange, apple, cranberry or grape work. Haven't tried it with minute tapioca."

Step by Step Method

Step 1

Mix sugar, tapioca, salt and juice in a medium saucepan. Let stand for 20 minutes.

Step 2

Cook over medium heat, stirring constantly, until mixture comes to a full boil. Boil 3-5 minutes. Remove from heat.

Step 3

Cool 20 minutes (mixture will thicken as it cools).

Step 4

Fold in whipped topping and pour into a bowl. Cover and refrigerate 1 hour or more.

Step 5

Serve with a dollop of whipped topping.

Made for the 1st Time Tag Game @ FF&F - This was so good, Mike, & an easy-fix too. I made it yesterday (using cranberry juice) for my weekly family brunch this morning. Tapioca puddings are a new treat for my Icelandic family. This was 1 of 3 desserts served today, it was well-rec'd & Siggi favored it more than the 1st we tried. The flavor possibilities are nearly endless, so this will definitely be repeated. Thx for sharing this recipe w/us. :-)
