Step 1: Mix sugar, tapioca, salt and juice in a medium saucepan. Let stand for 20 minutes.
Step 2: Cook over medium heat, stirring constantly, until mixture comes to a full boil. Boil 3-5 minutes. Remove from heat.
Step 3: Cool 20 minutes (mixture will thicken as it cools).
Step 4: Fold in whipped topping and pour into a bowl. Cover and refrigerate 1 hour or more.
Step 5: Serve with a dollop of whipped topping.
