Step by Step Method
Step 1
You need a deep fryer or a skillet. Heat it to 365° Fahrenheit.
Step 2
Set aside a plate or platter and cover with waxed paper or parchment paper. Then, in a small bowl, mix the buttermilk, salt, and pepper. Drain the pickles, then add them in. Set it aside.
Step 3
Get a large bowl with a lid. Mix together the flour, cornmeal, seafood seasoning, and the 1/4 teaspoon Cajun seasoning. Add the pickles just a little at a time. Coat them evenly on both sides by shaking the container. Take the pickles out and place them on the plate or platter.
Step 4
In several batches, fry the pickles for 1 to 2 minutes or until golden brown and just crisp on the outside and still moist on the inside. Drain them on some paper towels.
Step 5
In a small bowl, mix the ranch dressing and the 1/2 teaspoon Cajun seasoning. Serve this on the side as a dip.
