Step by Step Method

Step 1

Combine the dry batter ingredients in a shallow bowl.

Step 2

WET BATTER: Mix 2/3 cup flour, 1/2 teaspoon salt and 1/4 teaspoon pepper in a bowl. Whisk 3/4 cup water and the egg yolk. Gradually mix into the the flour-salt-pepper mixture.

Step 3

Heat oil to 365°F in deep pan or fryer to a depth of about 2-inches.

Step 4

Using a pastry brush, brush the chicken pieces with cold water, then dip in dry seasoned flour mix, then coat into the wet batter, then back in seasoned flour mix.

Step 5

Fry in hot Crisco for 15 to 18 minutes or until well browned. Drain on paper.

This recipe was made on 2/18 for mine and my SO's dinner,and most importantly for the " Alphabet Tag Game " :). Instead of using a whole chicken, I used half of a VERY large chicken breast. Then it was butterflied and cut in half. All the dry ingredients were reduced by half. The wet ingredients were done as follows,1/3 cup of flour,the amount of salt remained the same. As for the pepper that was increased to 1/2 teaspoon. And since it's pretty difficult to get just half of an egg yolk,;) that remained the same. Just enough water was used to make a batter. My SO and I both enjoyed taste,in fact my SO like it so much he gave it a " Good Solid 4 *'s ". Thanks for posting and, " Keep Smiling :)
