Step by Step Method

Step 1

In a heavy bottom pan, drizzle enough vegetable oil to coat bottom.

Step 2

Cook onions over medium-high heat, until translucent, about 5 minutes.

Step 3

Add the beef broth.

Step 4

Bring to a boil; reduce heat and simmer for half an hour.

Step 5

Add a bread round in each of 2 bowls; pour soup over bread rounds.

Step 6

Add a slice of mozzarella cheese to each bowl.

Step 7

Place under broiler until cheese starts to bubble.

Step 8

Remove from oven and top with parsley.

Step 9

Serve.
