Step 1: In a heavy bottom pan, drizzle enough vegetable oil to coat bottom.
Step 2: Cook onions over medium-high heat, until translucent, about 5 minutes.
Step 3: Add the beef broth.
Step 4: Bring to a boil; reduce heat and simmer for half an hour.
Step 5: Add a bread round in each of 2 bowls; pour soup over bread rounds.
Step 6: Add a slice of mozzarella cheese to each bowl.
Step 7: Place under broiler until cheese starts to bubble.
Step 8: Remove from oven and top with parsley.
Step 9: Serve.
