  • Bread rounds (two rounds)
  • 2 mozzarella cheese slices (fresh)

How to Make

  • Step 1: In a heavy bottom pan, drizzle enough vegetable oil to coat bottom.

  • Step 2: Cook onions over medium-high heat, until translucent, about 5 minutes.

  • Step 3: Add the beef broth.

  • Step 4: Bring to a boil; reduce heat and simmer for half an hour.

  • Step 5: Add a bread round in each of 2 bowls; pour soup over bread rounds.

  • Step 6: Add a slice of mozzarella cheese to each bowl.

  • Step 7: Place under broiler until cheese starts to bubble.

  • Step 8: Remove from oven and top with parsley.

  • Step 9: Serve.
