Step 1

Beat egg whites until stiff

Step 2

In another bowl, mix the 3 egg yolks with the flour mixed in a little milk

Step 3

Reserve.

Step 4

In a frying pan, heat the milk with the butter until almost boiling.

Step 5

Tempering ,Pour the milk over the yolks while mixing.

Step 6

Pour the mixture into the pan and boil again over low heat, while mixing.

Step 7

Stop the fire as soon as it boils.

Step 8

Fold in whites and chives

Step 9

In a pan (which will go in the oven!) With a little butter, pour the omelet and cook over medium heat for 30 seconds.

Step 10

Then place the pan in an oven preheated to 400° for 3 to 4 minutes or until set
