Step 1: Beat egg whites until stiff
Step 2: In another bowl, mix the 3 egg yolks with the flour mixed in a little milk
Step 3: Reserve.
Step 4: In a frying pan, heat the milk with the butter until almost boiling.
Step 5: Tempering ,Pour the milk over the yolks while mixing.
Step 6: Pour the mixture into the pan and boil again over low heat, while mixing.
Step 7: Stop the fire as soon as it boils.
Step 8: Fold in whites and chives
Step 9: In a pan (which will go in the oven!) With a little butter, pour the omelet and cook over medium heat for 30 seconds.
Step 10: Then place the pan in an oven preheated to 400° for 3 to 4 minutes or until set
