Step by Step Method

Step 1

Start by cooking the onions on medium heat for about seven minutes, or until the onions begin to turn translucent and soften.

Step 2

Add the oil and continue cooking for several more minutes.

Stir in the tomato paste and allow several minutes for the ingredients to simmer together.

Add the green beans and carrots, stir well, and cover.

Replace the carrots with 1/2 cup of raisins and 1/2 cup of slivered almonds. Add 1/2 teaspoon of ground cinnamon to the vegetables and simmer until the vegetables are tender.


Moroccan Lentil Stew Replace the canola oil with olive oil, and add 1/2 teaspoon of ground cumin and 1/2 teaspoon of ground turmeric to the tomato paste. Replace the carrots with 1/2 cup of cooked lentils and 1/2 cup of diced potatoes. Add 1/2 teaspoon of ground coriander to the vegetables and simmer until the vegetables are tender.

I loved this and will make it again as a topping for brown rice. The fresh green beans didnt look to nice so I used a 28 ounce can of cut green beans that I drained and matchstick carrots so not to overcook the beans. Also used petite diced tomatoes and dried ginger as I am not a fan of fresh. Great side dish for the meatloaf I made and would eat this by itself. Congrats Vic on you win! Wish I could give ten stars! I just loved the combo of the garlic and ginger with this, and I think the time spent "frying" the tomato paste made a big difference. Simply said, this recipe is better than the sum of its parts. I will most definitely be making this again! Made for CQ4 play, Team Happy Campers. Thanks for posting this - it's going straight into my Favorites! UPDATE 1/2018: I LOVE this recipe! It's good hot or cold, and I've made it countless times since CQ4. Goes well with many different types of cuisines! PS: I double the garlic and ginger, use a can of diced tomatoes (slightly drained). Yum!!!
