"The Greeks make these sweet little filo rolls in various shapes and sizes, and also with many variations of the cheese filling. They're all delicious! Some variations include the use of tahini along with the cheese, ground walnuts and cinnamon, dried fruits, glace figs. I found this sweet and easy little version in Gourmet Traveller magazine."

Step by Step Method

Step 1

Preheat oven to 375 F. Line a baking tray with parchment paper and set aside.

Step 2

With an electric mixer, beat cream cheese until light and fluffy, then add ricotta, cottage cheese and sugar. Beat until well combined.

Step 3

Take out four sheets of filo. Place a sheet on a works surface and brush lightly with melted butter, then top with another sheet of pastry. Continue brushing and layering until you have four layers.

Step 4

Cut the layered filo into three rectangles, approximately 4 1/2 x 9 inches. Place one of the rectangles, with the short end facing you, on a work surface and spoon 1 tbsp. of the cheese mixture along the shortest side, leaving a 1/2 inch border. Roll the pastry into a cylinder, folding in the sides as you roll.

Step 5

Brush the cylinders with melted butter and place on the prepared tray. Repeat with the remaining filo, filling and butter to form 18 rolls. You may have some filling left over.

Step 6

Bake the filo rolls for 12 minutes or until crisp and golden. Dust with cinnamon, then serve immediately. These don't keep, but that shouldn't be a problem!
