"He used more salt and pepper than I showed here, I believe go with your taste now if you add everything together you are going to get a frittata and veggies are going to be a little crunchier .i finished in microwave this is one of those egg dishes that you cook slower i think everything was added this way because of the way elvis seemed to eat ,he liked all his food well done and pretty incorporated"

Very nice basic Omelet. I let the onions & peppers cook for a couple of minutes before adding the egg/cheese mixture to the pan. I cut the recipe back to 2 eggs. 5 minutes covered was perfect. I enjoyed my Sunday Brunch and will repeat this recipe. Perhaps I'll sing along with "Heartbreak Hotel" :D :D :D
