Step by Step Method

Step 1

Slice bagel in half. Butter cut sides of each half and toast in a toaster oven or on a griddle (if using a pop-up toaster, butter halves after they are toasted).

Step 2

Meanwhile, heat a cast-iron or nonstick skillet. Add butter to skillet.

Step 3

Carefully crack both eggs into skillet. When whites begin to set, immediately puncture yolks.

Step 4

Top one egg with cheese and bacon. Place remaining egg, yolk-side down on top of bacon (like an egg-on-egg sandwich). Transfer eggs onto one toasted half of the bagel; top with remaining bagel half and lightly press together. Serve immediately with hot sauce or ketchup, or wrap halfway in parchment paper or aluminum foil for a portable breakfast.

Delicious Sunday Brunch. Very easy to put together and very tasty. I used Sweet Baby Joe BBQ sauce. Cut the Bacon back to 1 1/2 slices. White aged Cheddar . 7Oct 2018 . Enjoyed it this time just as much as last. Used cheddar, fried my eggs side be side and put them on th page the way. Chopped my bacon. Fran's Hot Sauce was the topper. So veery satisfying. 26 August 19 . Enjoyed again

I actually made this for dinner using a Rye bacon and just one slice of rindless eye bacon otherwise made as per recipe for a delicious breakfast for dinner. Thank you NYThaddeus, made for Pick Me tag game under the 48 hour rule.
