"I had this at my sister's and we loved it big time! The chicken is full of the complex flavors of Thailand. Cilantro, jalapeno, ginger, basil, garlic and coriander all play well together to produce this aromatic, slightly spicy chicken that leaves you wanting more. This make ahead dish freezes well too. The prep time is the minimum amount of time for the chicken to be marinated."

Step by Step Method

Step 1

Add marinade ingredients to food processor, and puree until smooth.

Step 2

Arrange chicken parts in a single layer in a large freezer bag. Pour marinade over chicken, seal tightly or vacuum seal and massage the marinade into the chicken a bit.

Step 3

Cover, and refrigerate for at least 2 hours and up to 24 hours, or simply lay it flat in the freezer and freeze for another day. When ready to cook, thaw completely. The safest way to thaw is in the refrigerator overnight.

To Bake:

Preheat oven to 375 F.

Step 6

Heat a large oven-proof skillet over medium to high heat. Add oil, and wait until it ripples or shimmers.

Step 7

Add chicken pieces, and sear on each side for 3-4 minutes, then place skillet in oven for 15 - 20 minutes, or until it has reached an internal temperature of 165 F.

Step 8

Cover with foil, and let stand on a platter for 5-10 minutes before serving.

If you want to grill it instead:

Place chicken on medium-hot well-oiled grill. Turn when chicken has grill marks (Approximately 5-6 minutes). Grill until internal temperature is 165 F at the thickest part (About 7-8 minutes).

Step 11

Sprinkle with more chopped cilantro, and serve with lime wedges.

This is a wow and a real winner! I scaled and halved the recipe which made for a delicious evening meal and made for awesome roll ups the next day. Can't wait to make this on the bbq!

Daily Inspiration

Lots of flavor in this chicken. I scaled the recipe back to two chicken breasts since it was just the two of us. This chicken would also be great on the grill. Served it with some roasted asparagus - delish!

This was so flavorful! A lot of times, I don't feel that marinades are worth it, but this was. The flavors really imbued every morsel. Yum! I had one huge breast, so cut it in pieces for the two of us and used less of the marinade ingredients proportionately.

Flavorful chicken! I only marinated it for 2 hours and it was still packed with basil, cilantro, coconut flavor! The chicken was very tender, too. Yum. Thank you!

I cut the recipe in half...I had two huge chicken breast so that's what I used...I had planned to marinade for 24 hours but life got in the way and it marinaded for 48 hours...it came out so moist and tender...we didn't need a knife to cut it...we loved the flavor and it was all the way through the meat...don't over use the lime or else it will overpower the other flavors...I had to cook it the full 20 minutes for it to hit the correct temperature...this is a keeper...made for Bill Board tag game...
