"I love an easy foil wrapped dinner and this one is very tasty. Originally a kraft recipe using breasts. A nice green salad goes well with this recipe. This is not an authentic Mexican recipe but uses some Mexi ingredients. The chicken comes out tender, moist & tasty. Not too spicy, just right. I omitted the sour cream."
Pre-heat oven 400f.
Sprinkle and rub the chicken with the taco seasoning.
Place 1/4 of the potato slices in the center of each doubled foil sheet.
Top with chicken, cheese & salsa.
Fold to make 4 packet, leaving room for heat circulation.
Place on a baking sheet.
Bake 30 - 35 minutes (400f).
Cool 5 minutes.
Cut slits in foil to release steam before opening packets.
Top with sour cream & serve.
