"I love an easy foil wrapped dinner and this one is very tasty. Originally a kraft recipe using breasts. A nice green salad goes well with this recipe. This is not an authentic Mexican recipe but uses some Mexi ingredients. The chicken comes out tender, moist & tasty. Not too spicy, just right. I omitted the sour cream."

  • When selecting the potatoes, choose small to medium sized potatoes for the best results.
  • For a spicier dish, use a hot salsa instead of a mild salsa.

  • Substitute the chicken thighs for boneless, skinless chicken breasts. This substitution will make the dish more lean and provide a milder flavor that is more suitable for a wider range of palates.
  • Substitute the Tex Mex cheese for a milder cheese such as mozzarella. This substitution will reduce the spiciness of the dish while still providing a cheesy flavor.
