"This is not a traditional recipe but it does follow the basic ingredients, is very tasty and as said, in the title, easy. I have made this recipe for many years changing something nearly every time Nasi Goreng is something you can play with. If you cannot find ketjap manis in your local stores google it to get a recipe. I prefer ready made, store bought. If you have deep fried Prawn crackers serve them along side. The 6 cups of rice is after cooking not raw (apprx1 3 cups raw)"

Step by Step Method

Step 1

In a food processor combine the peanuts, 1 tablespoons peanut oil, garlic cloves, jalapenos, coriander seeds, ketchup and shallots.

Step 2

Process until you have a smooth paste.

Step 3

In a large skillet or wok heat 1 tablesppon of oil add a spoonful of the paste, stir, get the aroma going, about 1 minute.

Step 4

Add prawns and chicken, stir fry for about 3 minutes or until just cooked - do not overcook.

Step 5

Remove from pan.

Step 6

Add another tablespoon of oil add remaining paste, stir fry for a minute or two, add the rice, ketjap manis, soysauce and green onions.

Step 7

Stir fry for 3 minutes, return prawns and chicken to the pan and stir fry until everything is heated through 2-3 minutes.

Step 8

While all the ingredients are heating in another pan add 1 tablespoon of oil and gently fry the 4 eggs, until the whites are cooked but the yolks are stil runny.

Step 9

Divide the Nasi Goreng between 4 plates add an egg on top and serve.

Step 10

If you wish sprinkle on some chopped green onion
