Step 1: In a food processor combine the peanuts, 1 tablespoons peanut oil, garlic cloves, jalapenos, coriander seeds, ketchup and shallots.
Step 2: Process until you have a smooth paste.
Step 3: In a large skillet or wok heat 1 tablesppon of oil add a spoonful of the paste, stir, get the aroma going, about 1 minute.
Step 4: Add prawns and chicken, stir fry for about 3 minutes or until just cooked - do not overcook.
Step 5: Remove from pan.
Step 6: Add another tablespoon of oil add remaining paste, stir fry for a minute or two, add the rice, ketjap manis, soysauce and green onions.
Step 7: Stir fry for 3 minutes, return prawns and chicken to the pan and stir fry until everything is heated through 2-3 minutes.
Step 8: While all the ingredients are heating in another pan add 1 tablespoon of oil and gently fry the 4 eggs, until the whites are cooked but the yolks are stil runny.
Step 9: Divide the Nasi Goreng between 4 plates add an egg on top and serve.
Step 10: If you wish sprinkle on some chopped green onion
