Ingredients

The ingredients are:
  • 3 tablespoons unsalted peanuts
  • 4 tablespoon peanut oil, divided
  • 4 large garlic cloves, peeled
  • 2 red jalapenos or green, use a hotter pepper if you wish
  • 1 teaspoon Coriander seeds
  • 1 tablespoon ketchup
  • 2 large shallots, peeled, cut into quarters
  • 10 ounces king prawns (cleaned, peeled and cut into 4 pieces)
  • 2 boneless chicken breasts (skinless, chopped into 1/2 inch pieces
  • 6 cups basmati rice, cooked
  • 1 tablespoon soy sauce, low sodium
  • 2 tablespoon ketjap manis
  • 2 green onions, chopped, green and white parts
  • 4 large eggs

How to Make

  • Step 1: In a food processor combine the peanuts, 1 tablespoons peanut oil, garlic cloves, jalapenos, coriander seeds, ketchup and shallots.

  • Step 2: Process until you have a smooth paste.

  • Step 3: In a large skillet or wok heat 1 tablesppon of oil add a spoonful of the paste, stir, get the aroma going, about 1 minute.

  • Step 4: Add prawns and chicken, stir fry for about 3 minutes or until just cooked - do not overcook.

  • Step 5: Remove from pan.

  • Step 6: Add another tablespoon of oil add remaining paste, stir fry for a minute or two, add the rice, ketjap manis, soysauce and green onions.

  • Step 7: Stir fry for 3 minutes, return prawns and chicken to the pan and stir fry until everything is heated through 2-3 minutes.

  • Step 8: While all the ingredients are heating in another pan add 1 tablespoon of oil and gently fry the 4 eggs, until the whites are cooked but the yolks are stil runny.

  • Step 9: Divide the Nasi Goreng between 4 plates add an egg on top and serve.

  • Step 10: If you wish sprinkle on some chopped green onion
