"This recipe was originally posted by CoffeeB at another cooking site and I loved it so much that I want to post it here for safe keeping, since she hasn't already posted it here. I have made it 3 times, twice, as a main dish served with Mexican Rice and just recently with Tortilla Chips, as an appetizer while entertaining. It was a huge hit each time and I love it! It's rich and delicious and so addicting! It only takes a few minutes to throw together and great when your in a hurry to make something good at the last minute. You can omit the chicken and add 1 pound or more of cooked ground beef if you like."

I made this to bring to my inlaws for an appetizer. We used Tortilla scoops to dip. So flipping good. They sure were a hit!
