Step by Step Method

Step 1

Sauté onion in a medium saucepan over medium heat 5 minutes until soft.

Step 2

Add the mushrooms through dill.

Step 3

Cover and simmer 15 minutes on medium-low heat.

Step 4

Add the bouillon and heat through.

Step 5

Season with salt to taste.

Step 6

Serve in soup cups each topped with 2 Tbs sour cream.

Loved the flavours of the mushroom and the dill and that little big of soy added enough salt for me so I just added pepper to taste, though I did have one oops moment in that I put the chicken broth in at step 2 so bought to the boil and simmered for 30 minutes and then hit it with the stick blender to smooth it out a little but leaving chunky bits and enjoyed a huge bowl for dinner last night with enough left over for lunch today, thank you Echo Echo made for Pick Me tag game under the 48 hour rule.
