Step by Step Method

Step 1

Wash duckling, and wipe dry.

Step 2

Rub inside and out with Anise oil.(dont go crazy that stuff is STRONG) Let stand for 1 hour.

Step 3

Steam or cook rice until tender.

Step 4

Fry sausage, celery and onion until onion is golden.

Step 5

Drain excess grease off.

Step 6

Add to rice.

Step 7

Drain pineapple. Add pineapple and anise drops to rice.(again go easy on anise oil)

Step 8

Stuff duck and fasten with skewers.

Step 9

Roast at 350° F for 2 1/2 hours, or until tender.
