Step 1: Wash duckling, and wipe dry.
Step 2: Rub inside and out with Anise oil.(dont go crazy that stuff is STRONG) Let stand for 1 hour.
Step 3: Steam or cook rice until tender.
Step 4: Fry sausage, celery and onion until onion is golden.
Step 5: Drain excess grease off.
Step 6: Add to rice.
Step 7: Drain pineapple. Add pineapple and anise drops to rice.(again go easy on anise oil)
Step 8: Stuff duck and fasten with skewers.
Step 9: Roast at 350° F for 2 1/2 hours, or until tender.
