Ingredients

The ingredients are:
  • 1 whole (5 pound) duck (they said duckling which is young duck)
  • 1 teaspoon anise oil
  • STUFFING
  • 24 ounces dry rice (3 cups white rice)
  • 1/2 pound sausage meat
  • 1 (2 ounce) celery stalk, chopped fine
  • 1 (4 ounce) yellow small onion, chopped fine
  • 8 ounces crushed pineapple (drained)
  • 3/4 teaspoon anise
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Wash duckling, and wipe dry.

  • Step 2: Rub inside and out with Anise oil.(dont go crazy that stuff is STRONG) Let stand for 1 hour.

  • Step 3: Steam or cook rice until tender.

  • Step 4: Fry sausage, celery and onion until onion is golden.

  • Step 5: Drain excess grease off.

  • Step 6: Add to rice.

  • Step 7: Drain pineapple. Add pineapple and anise drops to rice.(again go easy on anise oil)

  • Step 8: Stuff duck and fasten with skewers.

  • Step 9: Roast at 350° F for 2 1/2 hours, or until tender.
