I must admit I chose this recipe because I always want to try something at least once! I've eaten plenty of cooked dandelions, but never any that were raw. This salad is SO GOOD! The apples offset the slight bitterness of the dandelions and we loved the crunch of the celery. We thought the lemon by itself needed "je ne sais pas", so we tossed the greens in a couple teaspoons of the bacon grease. How could it be bad? Either way, it was great and we'll definitely be eating raw dandelions again!
