Step by Step Method

Step 1

Place the chicken, kidney beans, onion, garlic and red pepper in 4-qt. slow cooker. In a small bowl, combine the salsa, curry powder, salt and pepper; pour over top.

Step 2

Cover and cook on low for 4-5 hours or until chicken is tender. Stir in green beans. Combine cornstarch and water until smooth; gradually stir into slow cooker. Cover and cook on high for 30 minutes or until sauce is thickened.

Step 3

Serve the chicken and sauce and cooked rice

For flavour I would give this a 5. Very mild curry flavour that was wonderful over the rice. However the instructions do not say when to add the broth. I wasn't sure if I was to cook the rice in it or add it to the chicken - I did add it to the chicken and it made a lovely sauce. I will make this again Rosegirl and will upgrade it to a 5 star when you add the instruction for the broth.
