Soak the onion in cold water for about 30 minutes while prepping (slicing/mincing) the other ingredients.
Peel the cucumbers and cut them into thin rounds. Place them in a medium bowl.
Drain the onions and pat them dry. Add them to the bowl with the cucumbers.
In a small bowl, combine the yogurt and the honey. Season well with freshly ground pepper. Scrape into the bowl with the cucumbers.
Add the remaining ingredients except walnuts, and mix well. Cover and refrigerate until ready to serve.
To serve, sprinkle the walnuts over the top.
